Yummy Fruity Chewy Coconut and Cashew Balls

 

I’ve been playing again with some simple ideas for tasty raw snacks that you can literally whip up in a few minutes.

One of my favourites is to take a few ingredients and blend them, then roll them up to firm in the fridge.

My latest indulgence was to blend together apricots, raisins, dates and cashews, then throw in a handful of dessicated coconut (which is optional for those of you who are very strict about the raw ingredients) and a squirt of raw agave nectar if you want everything to stick together just a little bit better.

First of all they literally took minutes to make. And secondly I was delighted by how tasty they turned out.

And my verdict? I’ll definitely be making these again and already have some ideas how I could create several variations of them.

So the next step will be to share the recipe with those of you who would like to make them yourselves. Hoping to get it posted up here on the site in the next day or two. Watch this space.
